It really depends on your smoker, and the outside temp, but 3 to 4 hours is a good guess.
Multiple temp probes are a good idea, and I like the suggestion to quarter instead of spatchcock because different parts will cook at different rates. Once you get to temp, pull it, and wrap with foil, then wrap with towels, and put it in a cooler. It'll keep temp and moisture that way for a good hour.
