Missionary couples have a lot more free time than most people assume.

It also depends a lot on the Mission President.

A mission should not be viewed as an extended vacation and your time is not totally within your control; however, if you are getting the "job" done in a limited number of hours, it is also not a 24x7 calling for couples.

Again, there is a lot of flexibility depending upon the assignment and mission needs.

MP has the ultimate call but most are very accommodating with couples if their primary focus is their assignment.

An MP in another mission told me about a couple that was basically driving all over Mexico for several days at a time to "see the sights." He had no idea this was going on as couples should not leave the mission without MP permission. The funny thing is, I used to work with that Senior Elder before we both went on missions.
