I can put the meat puzzle into place - after sprinkling a little rub inside the open area where the bone has come out - then just stick one kabob stick through that end and through the rest of the piece of meat. It holds it all in place and takes all of about 5 seconds - without me having to worry about tying the string or holding stuff in place while I do. And I've never had the kabob stick come out or cause any problems. Once it's cooked - I can pull the stick out before I foil, and the meat all tends to stay in place even once the stick has been removed.
String sounds interesting. But the kabob sticks are so easy and have worked so well, I don't see myself every trying string.
