This is a good idea but it might be a little more difficult for someone new to Korea to hop on a bus and get there.
There's plenty to do in Seoul and I would suggest spending your time there and making the most out of Seoul.

Korea has some awesome national parks. Hiking soraksan would be fun if your kids are into that kind of thing.

That's true. Dongdaemoon and itaewon shops are still safe right? Plus the Korean War Museum is English friendly.
