Did you expect NC State to win? Probably not. And now that they did (even if it

was that 1 in 10 times chance), do they get credit for it? And does Clemson get dinged for it? Of course they should. NC State was unranked, too.

If the actual result on the field doesn’t matter in these cases, then the whole ranking system is completely pointless.

Could BYU beat Clemson today? Maybe. Maybe not. BYU has beaten everyone—good and bad—on their schedule so far this year (there are no fluky wins). Clemson has not, so at some point it makes sense they actually drop significantly in the rankings because of actual results, not stay buoyed up because of prestige only.
