different coverage in CA vs TX for instance. If I get Blue Cross/Blue Shield UTAH edition for instance, what kind of problems will that cause if that isn’t their standard coverage for my kids getting my insurance in Texas?

I believe they can still be on your insurance up to age 25 or 26.

I never had problems with my BC/BS Texas insurance with my kid in Utah at BYU using it
