Sous vide 131
Coat with kosher salt. Sear on ripping hot cast iron.

Serve with chimichurri:
2 large cloves of garlic
Parsley bunch
Dash of red pepper flakes
A bit of olive oil
A dash of ed wine vinegar
Chop it all up mix together and put on steak.

You can also make a compound butter with the chimichurri for steak.
