Just an unnecessary step. With 80/20 beef you've got plenty of fat.
I saw the recipe calls for 85/15. She probably uses the butter to avoid a thin smashed patty from sticking to cooking surface. If she'd use 80/20 then she wouldn't need it. And I don't think you taste the butter with a fatty patty like that.
