I think a lot of people have felt trapped like you have. I know I've been there a couple of times in my career. Both times, I realized it wasn't healthy and I took jobs with different companies for a little bit of a pay cut. I haven't regretted either move as my mental health was in a much better position afterward both times.
At least it seems like you enjoy your boss and the people you work with. That's a huge part of the battle. But, man, if I was stuck pulling an all-nighter more than once a year, I'd personally be looking at making a pretty dramatic career change. Some people can handle that stuff and actually seem to enjoy it. I'm not one of them.
