You're including 2020, which completely changes the picture.

Take out 2020 and you get 56.666 and arguably only because he inherited a pretty good D his first year. Point being he hasn't improved the D over the years and arguably allowed it to get worst and hasn't been able to make it better.

The offense over the same time period improved remarkably, and is playing above what I would expect at BYU...

I looked at the defensive ratings from 2007-2015 and that average is 40.333 so
