The filming style of Star Wars has, and always will be, akin to WW2. It's good for cinemetography.
At first, the maneuverability in that clip looks cool (because it is), but if you do a bit of cursory math (from 31s to 32s in the turning dogfight with the tie-fighter, the x-wing is in a dive and crosses approximately 8 lengths of the x-wing in that 1 second span from the apex of the dive to where it crosses the building.

The length of an x-wing is 13.4 meters (43 feet). 43 * 8 => 344 ft in 1 second.

344 feet per second is equivalent to 234 miles per hour.

Maverick would kick Poe Dameron's hiney....not just in the F22 outlined in the OP, but in his relic P51 mustang, which had an effective combat top speed of 490 mph, or twice as fast as that x-wing in the clip. F22's super cruise of Mach 1.58 is almost 1200mph, that's not even with afterburner. You wouldn't see the F22 in that clip, you'd just see dead storm troopers.

Dog fighting is all about speed energy and stand-off weapons distance. The star wars universe has none of that because WW1/WW2 style dog fights are "cooler" on the big screen.
