Anybody smoke boneless, skinless, chicken thighs?
A BBQ place I frequent does this and they’re phenomenal. Juicy, Smokey, and delicious.
I might try this tomorrow on my pellet grill. Anybody done this? Just smoke at 225 until 165 internal?

Chicken takes a lot of smoke. I cook at 325 with hickory smoke. Low and slow

I do bone-in, but take off (and keep off) the skin to season the meat
