275 is too high. Dial down to 220 and 3-2-1 is perfection

I like hot and fast, personally. But if you do 3-2-1, lower heat is better.

Even at 220 I think 321 is too long. I do 2.5, 1.5, 1 or some ratio of 5 hours.

This is pretty good. I go about 265 for 3 - 3.5 hrs.
