And there isn't a better canvas for this than an NCAA football game. Make the team as a freshman, get in on a couple of plays in garbage time, increase stats through drills, etc.

They've had all of this in previous games, but there wasn't much depth. What kills me is they slowly phased almost all of this out of Madden (RIP late 2000s Madden minicamp drills, my roommates and I would play those for hours against each other)

I get that this isn't everyone's cup of tea to have a dynamic single player life sim in a football game. I understand that because of a large chunk of the population's complete lack of inhibitions that Ultimate Team is where 90% of the money comes from, so the devs would have no incentive to put such a thing but man a guy can dream.
