Another plus of the Kamado style. I just scrape the ceramic shield into the
the charcoal for the next cook. Burns off while it's coming up to temp.
I've got no idea how to keep another style clean.

No but you could put a grease catch pan on a lower rack or line the bottom with
gaffer

I did line the bottom shield with foil in my PitBoss. A lot of grease collects on the, what do you call ‘em, grates (?)
