You wrap when you have good bark and the fat is rendered.
Finger shouldn't be bouncing back. Sometimes I may not wrap until 175 or 180.

Cook temp 225°, wrap at 160°. Pull off at 190°.

Cook 225-250. Take off smoker when probe tender. Usually somewhere north of 200.

I cook at 250, wrap around 165 ish or when I’m happy with the bark, pull off at

225 foil wrap 165 and put in oven at 225. Check for wubba between 196-201.

225, foil boat at 165. Pull around 195, wrap in foil and towels and rest in cooler a few hrs.
