BYU would need to do something different
It is hard enough to get LDS fold to hang around at a ward party. I've made you same point for years. People love to sit around and drink alcohol. Take the alcohol away and they are just sitting around getting bored.
For it to work at BYU you almost need a fair type of events. Blow up ostacle toys for the kids, food and entertainment booths, etc.
