Not only is #2 wrong, but we scored a touchdown because Texas adjusted similarly
to what you suggest teams do. Adam Hine scored a touchdown in the 4th quarter against Texas (not only that, but he went in nearly untouched).
The fact that I can remember a play (off the top of my head) that did not go to your "proposed tendencies" leads me to believe there are others if I had the time or inclination to go back and chart things like this.
