You're looking at it from the wrong perspective. It isn't how long you cook it.
It's how long at 225 it takes to get the internal temperature up to 195-200 and for you to be able to stick a fork in the side and twist it with relative ease. Some briskets take longer, and some take less time. The same holds true for baking, by the way. Food is done when it's done.
