There are definitely countless ways to do it, but Franklin's
Method resulted in a really good brisket. I used parchment paper to wrap when I couldn't find "butcher paper" at my grocery store.

I recently checked out Little Ms: BBQ here in PHX, which is a newer competition style bbq joint and I saw them wrapping brisket with the pink butcher paper as well.
