Rule changes a few years ago allowed 8 hours a week for coaches to work with
players during summer term. So they were working with them from June - Aug while school was in session. Specifically, "a student-athlete who is enrolled in summer school may engage in required weight-training, conditioning and skill-related instruction for up to eight weeks (not required to be consecutive weeks). Participation in such activities shall be limited to a maximum of eight hours per week with not more than two hours per week spent on skill-related instruction" is what the NCAA allows. But maybe more of what you're looking for is the NCAA allows 30 days of practice in the six weeks before the first game. BYU's first fall practice was October 3rd.
