You want air pockets.. you don't want a hockey puck..

You want the grease to bubble up through the meat while it cooks. This burger will not taste ANYTHING like a frozen pre-formed burger you'll buy from Costco/grocery store that you cook on your weber.

This burger will taste like 5 Guys, Shake Shake, In-and-out... etc.

Unfortunately, this is science. Mixing activates the proteins, and the beef gets more sticky the more you mix it.
