Do you grill it to med rare or is it finished like

A pork butt or brisket. I would think there would enough fat to smoke it fully through.

It's a short cook (50 min) so anything is fine.

I typically smoke tri tip for an hour....then slow cook for another 2 hrs

Completely different Tritip is usually cooked by grilling

Ribs are good, Pulled Pork with a bone in pork shoulder is really good.

Go with a pork butt instead of ribs. Easier and less technique
