When seafood is flown in daily I don't see your point.
Could it be simple snobbery? When it's fresh, never frozen, what is the difference, price? As an example, Park City has Lobster Rolls that have been voted the best in the country in competition with those from Maine. Market Street has fresh fish flown in daily. Could it be the difference is in the preparation?
