Fire up the grill and put it in at 225 until internal temp
Is 165, then wrap in foil and put back in until internal temp hits 190. Wrap it in a towel and put it in a cooler for 3 hours. Probably about 16 hours total time. Get started tonight.

You don't turn it. Cook it fat side up.
