My favorite excursion was out of Skagway. We took a fast ferry to Haines and since there were no cruise ships there we had the whole town to ourselves. We went kayaking on a secluded lake and were far away from the crowds of tourists back in town.
I'd do things to maximize time spent doing cultural things and things you can't see in Utah. We have great mountains and hiking scenery. Glaciers, whale watching, native culture stuff. That's what I'd want to do.
Also, Cruise ships are designed for warmer weather. When the ships moving there's a constant breeze on the outside decks. It can get cold. I'd want to minimize "at sea" days or make sure you have a balcony to enjoy the views. There were times when my wife and I were the only ones on the upper decks and hid behind the glass walls to see the views. But it was chilly.
