my youngest are very picky too and the dining room waiters did a great job with them
they would bring little portions of something from the main menu because we wanted them to at least try a bite of new things. then the waiters would bring something more kid friendly and later in the dinner make a big deal about "sneaking" them an extra dessert when they did a good job trying the new things.
