Anybody here smoke brisket? Having problems.
Recipe said cook at 250 grill temp for 5 or 6 hours and should reach around 165 or so. Then wrap it and cook for a few more hours until it reaches 200 internal temp. I went after 5 and a half hours and wrapped it and the internal temp was already 200. Tried two diff thermometers.

How could it be off by that much?
