How many pounds was the brisket? Was it just the flat?
Or was it a packer (point and flat attached)?

At 250 for the internal temp to reach 200 after 5.5 hours is definitely an anomaly. How were you measuring the grill temp? Does your grill have a built in thermometer or were you using a third party one? Sometimes the built ins are cheap and potentially inaccurate.
