I've been watching some youtube videos, and I haven't seen that done. But most of the videos I have seen, there is no texture on the wall either. It's basically new sheetrock.

i'd leave the texture unless its flaky already. better adherence with thinset

The way I've seen subs hang ledger stone is to staple metal lath to the wall,

I’d use Hardi Backer or backer board, and liberally apply the thin set.
