It isnt really all that expensive to ensure a solid installation. But I'm sure for residential purposes, adhering to textured drywall would be fine.

The way I've seen subs hang ledger stone is to staple metal lath to the wall,

So would I have to mud over the metal lath, or just use the thinset over metal lath?

I’d use Hardi Backer or backer board, and liberally apply the thin set.
