I cooked baby back ribs @ 275 degrees in an oven for 4 hours and they turned out
kind of rubbery.

I had them wrapped in 3 layers of foil, with spices, some marinades and aromatics in there. Yes, I did take off the back side membrane (I'm not even sure why/how taking off the membrane is even supposed to help it turn out well, but I did it nevertheless)

Anyone have any ideas what I might have done wrong? Cooked too long? too short? too much heat? not enough heat?
