Same...cook the first three hours spritzing every hour with apple juice,

Collagen breaks down well before that. I think it’s fully dissolved by 185 (assuming you cook low enough).

I do it perfectly. 350 for 65 minutes covered with 1/3 cup water in the sheet..

350 for 3 hours. Double wrap not triple. Cook on grill after for 5-10 min.
