down. There was a pool of fat in the foil, so that all seemed to have broken down. I probably did overcook. Will have to try again with some of the suggestions here, thnx much

Collagen breaks down well before that. I think it’s fully dissolved by 185 (assuming you cook low enough).

I do it perfectly. 350 for 65 minutes covered with 1/3 cup water in the sheet..

350 for 3 hours. Double wrap not triple. Cook on grill after for 5-10 min.

Too high for a slow cook, too low for the right faster cook. Agree with most notes above
