Status update: brisket flat is over 200 degrees, point 20 degrees behind.
Right now I'm planning on letting it ride, but it seems the flat will end up dry and tough.

Background: I'm in hour 15 smoking it on a pellet grill. I did 8 hours unwrapped at 195, and am now on 7 hours wrapped at 235-250, with the grill currently set at 250.

Is this just par for the course?
