If it's thick enough I slice with the grain BEFORE cooking. A little moisture loss is worth having a much more chewable
Not all the way through, obviously. I've seen many Mexican cooks prep it this way. Just cut it as it's grilling. (I'm not as handy so I do it beforehand)

Also best fajitas out there are HEB brand, pre marinated beef fajitas.
