in the industry I work in (funeral) we have seen deceased individuals who almost certainly died of Covid, but it wasn't counted (usually because of a lack of testing, especially early on). So, my anecdote wipes out your anecdote.
Just look at the CDC numbers on deaths to see what the excess deaths have been this year and you'll see that we aren't overinflating the numbers.
I am with you that the risk for the players is quite low. I really don't think that's what everyone is concerned about. It's the support staff, the coaches, the university employees needed at games, and the fans who are much more likely to be in riskier age categories that would be susceptible to higher risk of complications or death from Covid.
Personally, I think it can be done safely, provided we get off our high horse and wear a mask, practice social distancing, and stay home if we are sick.
