Here's a tip for tamales
First, of course, you have to start with good ones. You steam them first, to heat them all the way through. Then peel of the corn husks and pan fry them in butter for just about 30 seconds per side. That pan frying really adds some great flavor.

I serve them with sour cream and my home made green salsa.

Done this way, tamales are really excellent.
