You were definitely right about when to pull it. That was the most tender, perfect pork tenderloin I have ever had. That was amazing.
I made a sauce with raspberries, orange juice, soy sauce and a little bit of apple cider vinegar as the main ingredients. Used a little honey, pepper, onion/garlic powder as well. Boiled and reduced the raspberries and then simmered it for a bit.
Garlic mashed potatoes, roasted broccoli and the pork with the raspberry sauce. Amazing.
