every day at closing or the sodas would go flat. I don't know why that is, but I can confirm that when someone forgot to do it the night before the sodas would be flat every time.

The ice helps cool the syrup and water which does help it retain the carbonation.

They usually run the water and syrup lines THROUGH the ice on top of the machine
