And had ice from the machine next to it and it was carbonated, but now I’m questioning everything I’ve ever believed about soda fountains before

It says that the carbonated water needs to be cold to prevent the dissolved CO2

The ice helps cool the syrup and water which does help it retain the carbonation.

They usually run the water and syrup lines THROUGH the ice on top of the machine
