An easement isn't blanket access to his property by whomever.
He could certainly post those signs to warn away people who don't have rights to his land. I don't see any problem so long as it doesn't impede your legal easement.

Is the easement recorded? And what is the state of the road - paved, dirt?

Yes. It’s recorded at the county. It’s a gravel/dirt road.

He should be able to post signs, etc., but he shouldn't block your access with a gate unless it can be easily opened.
