I might try Allegiant again from Ogden or Provo, but not on a longer flight. I also had been the one to suggest the flight and my friends that went with me weren't happy about the delay. I did talk to somebody from Cedar City on the flight over that said they take it all of the time (family to stay with there) and it was usually fine.
I haven't flow Alaskan yet, but my preference for US airlines is:

I have flown RyanAir in Europe a few times. You need to know what airport you're flying into and watch the baggage fees. But for example, I took a day trip from London Stanstead to Goteborg to go to Liesberg theme park for about $60 RT on Ryan. Just a small day pack carried on and quick train from the airport to the theme park.
I've taken EasyJet as well as some other discount carriers in Europe quite a few times. TurkishAir usually serves a meal, and the food is great. But most charge for food and drinks. Most of the flights that I take over there are usually 2.5 hours or less.
I've flown JetStar and Virgin Australia, and a discount airline in Peru, but I haven't taken any in Africa or Asia yet. I've only taken major airlines there. Actually about half of the places I've visited in Asia and Africa I've visited via cruise ships.
I did like Cathay Pacific an Emirates.
