did you make the sauce to braise with from scratch? Not sure how you feel about
using alcohol in food. Some don't some are okay with that. In any case Tamari ( I prefer it to standard soy), plum sake, fresh ginger, green onion, and wildflower honey really make the pork belly pop. If you are not a fan of braising with alcohol using either fresh plums or a plum jam will give you that complete umami explosion.
