lol, when I bake I measure, when I cook I eyeball. I have had to reverse
engineer so many of my recipes in order to give them to others who want to make whatever it is. I would use the same amount as you would soy. The only difference is Tamari doesn't use wheat. Not that gluten is an issue, but for some reason I enjoy the flavor better so it's a personal choice.

Just glad you didn't just slather hoisen all over your pork belly and call it good.
