Believe it or not, that stuff is scouted. DB's have tendencies game film is reviewed to see if they are playing over or under. If they are playing over (meaning they don't let the receiver get between them and the endzone) QB's are coached to throw short. If they are playing under then you lead the receiver. Playing over has become increasingly popular, especially when safeties are covering deep zones.
