Al's French Fries is very mediocre but it's a James Beard award winning restaurant. Eat there and wonder why. (their fries are pretty good. Nothing else on the menu is. It's tradition to put white vinegar on the fries there)
You could eat out every night at a non-chain restaurant and still not get all the good ones.

If you want to make a religious pilgrimage, Joseph Smith's birthplace is less than 90 minutes away and has a monument and visitor center and nice grounds.
The VT teddy bear company tour is cool.
The band Phish used to play at nectars before they made it big, you can go eat there.
