Do your wrap at around 165 degrees. Use tinfoil or butcher paper (the purists
will say butcher paper, but it doesn't matter). In the morning, keep the tinfoil on and move directly to the cooler.

I like to use a foil pan after I wrap it to collect any juices that may leak out of the tinfoil. Mix those juices back in when you're shredding the pork to make it extra moist.
