yeah, I've had some pork butts take longer especially those with long stalls
I say my brisket takes longer simply because my brisket is always larger in weight. It usually takes me about 1-1.5 hours per pound of brisket and I avg about a 14-15 lb brisket (at least). I usually finish up a 10 lb pork butt in about 10 hours depending on toughness of meat. I always stay at 225 and typically wrap after about 5 hours.

He's cooking some 8 lbers...a bit on the small side. They should hit 195 but he's missing one of the most critical parts...let it rest.
