I had this exact situation two weeks ago.
I was smoking 2x Costco pork butts for family dinner after my son’s baptism on Sunday. Dinner was at 5:30pm Sunday.

I was going to the Baylor game Saturday night, and put them on the smoker at 225 before I left at 6pm. Spritzed them when I got home at 2am and again when I woke up at 6am to wrap them in foil.

I wrapped them at 6am, took them off at about 1pm when they were done (203 degrees), threw them in a cooler to rest until dinner and they were at about 170 degrees internal temperature when I pulled them at 5:30pm. They turned out awesome and everyone loved the pork.

So I would follow that timeline if I were you.
